
Ingredients
Serves 4
2kg/1lb tomatoes
375g/12oz feta cheese
1 cos lettuce, torn into pieces
1 cucumber, quartered and sliced
4 celery stalks, diced
1 yellow capsicum
3/4 pitted black olives, halved
6 spring onions, thinly sliced
6 tbsp olive oil
4 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
Easy Step - by - Step
1 Slice the tomatoes into wedges and place in a large salad bowl. Cut the feta cheese into small cubes. Add the cheese, lettuce, cucumber and celery to the bowl.
2 Deseed and dice the capsicum. Add the capsicum, olives and spring onions to the bowl.
3 Drizzle the oil and lemon juice onto the salad. Season with salt and black pepper. Toss the salad to coat. Serve immediately.
